Hilton Kuala Lumpur’s Ramadan buffet returns under the theme “Jamuan Penuh Makna, Raikan Detik Bersama”, offering a dining experience that blends tradition, modernity, and sustainability. This year’s preview at Vasco’s was a showcase of how festive dining can feel both familiar and forward-thinking.
We experienced it firsthand at the media preview, and it was clear from the start that this wasn’t going to be an ordinary buka puasa spread. From the moment we stepped in, the atmosphere, the service, and the sheer scale of the offerings set the tone for an evening that was as much about connection as it was about flavour.
A buffet that balances tradition & innovation
With more than 180 dishes, Hilton KL’s spread is ambitious but curated with care. It honours Malaysian culinary heritage while introducing creative touches that keep things interesting.
One of the most notable innovations this year is the Keropok Citarasa Laut, a cracker made from repurposed seafood shells. The shells are cleaned, roasted, dehydrated, and ground into powder before being mixed with tapioca flour and spices, then steamed, sliced, and fried.
The result is crisp and flavourful, a clever way to turn waste into something delicious.

Meanwhile, the Otak-Otak Ikan Jenahak with Passion Fruit Salad is a dish that deserves attention. The smoky richness of otak-otak paired with the tangy sweetness of passion fruit creates a balanced bite that feels both nostalgic and refreshing. It’s a smart way to elevate a familiar favourite.
Between heavier dishes, the Farm-to-Table showcase offers a refreshing pause. Heirloom vegetables from Cameron Highlands, gourmet mushrooms, and organic beetroot are paired with a smoked cheese dressing, proving that even a salad station can feel considered and satisfying.

Seafood, live & carving stations
Seafood takes centre stage with responsibly sourced selections certified by ASC, BAP, and MSC. The Oceanic Bounty on Ice features oysters, mussels, clams, and prawns, all fresh and well-presented. Hot seafood dishes continue the theme, with highlights like Pan-Seared Sea Bass and Flower Crab Masak Lemak Nenas.

Live stations add energy to the experience. Watching chefs prepare dishes like Golden Snapper Fish Head Curry or Lebanese Shawarma brings a sense of theatre to the meal. Grilled Scallops with Ginger Garlic Chili were perfectly seared, while the Royale Caesar Reef Lobster Caesar Salad offered indulgence without excess.
The carving section is a highlight of the buffet. The Australian Whole Lamb with Moroccan Chermoula was tender and aromatic, while the Smoked Paprika Beef Shank delivered depth and warmth. The Slow-Roasted Venison Timorensis, despite its appealing flavour profile, leaned slightly dry, a minor flaw in an otherwise strong lineup.

A sweet finish
The dessert spread combines classic pastries with local favourites: assorted Baklava, durian éclairs and crêpes, and Serawa Pulut Durian Musang King. The highlight remains Hilton’s iconic Durian Tempura, crispy on the outside, creamy inside, and unapologetically indulgent.

Our verdict
Hilton Kuala Lumpur’s Ramadan buffet succeeds because it feels intentional. It honours tradition without being stuck in it, introduces innovation without losing authenticity, and approaches sustainability as more than a slogan. From the crackle of Keropok Citarasa Laut to the indulgence of Durian Tempura, this is a dining experience that reflects the spirit of Ramadan-warm, generous, and meaningful.
